A quick and flavorful low-carb empanada made with ground chicken, filled with cheddar, cream cheese, and jalapeños, then air-fried until golden.

To make it, flatten 3-4 oz ground chicken into a thin circle on greased parchment paper. Add cheddar, cream cheese & diced jalapeños. Fold it in half, coat with egg wash and Parmesan and air fry @ 400F for 10-12 mins.
