Keto Cinnamon Mug Cake with Cream Cheese Icing

This cinnamon mug cake was a favorite recipe of 2018! A quick and easy low-carb and keto-friendly dessert, made in a mug and topped with a delicious cream cheese icing. You can use either almond flour or coconut flour for the mug cake base.

For the Mug Cake: Melt 2 tablespoons of butter in a mug. Add the almond flour (or 1.5 tbsp coconut flour), 1 large egg, 1 tablespoon erythritol, 1/2 teaspoon baking powder, 1/4 teaspoon vanilla extract, and 1/2 teaspoon cinnamon to the mug. Mix all ingredients well until combined. Microwave for 90 seconds or until the cake is firm. For the Icing: Melt 2 tablespoons of cream cheese and 2 tablespoons of butter together. Mix with 1/4 teaspoon vanilla extract and 1/2 to 1 tablespoon erythritol (adjust to your sweetness preference). Either let the icing cool slightly and then spread over the mug cake, or pour it over the mug cake while it's still warm.
