Preheat your broiler. Line a baking sheet with parchment paper. For each pizza chip, place 1 tablespoon of shredded mozzarella in a pile on the parchment paper. Top each mozzarella pile with one pepperoni slice, then sprinkle an additional 1/2 tablespoon of shredded mozzarella over the pepperoni. Broil until the edges of the cheese are golden brown and crispy, to your preference. Be careful not to overcook, as they can burn quickly.
