Flavorful chicken bites marinated in pickle juice, coated in seasoned pork rinds, and air fried until crispy. A perfect low-carb and keto-friendly snack or meal.

1. Cut the chicken breast into cubes and add to a bowl with the pickles juice. Cover & soak for atleast 1 hour. 2. Whisk eggs in a bowl and add your pork rinds to a bowl with the seasonings. 3. Pat chicken dry, coat in egg & pork rinds. 4. Air fry at 400F for 10-12 minutes. Note: They will be juicer if you pan fry or deep fry in avocado oil!
