Sprinkle 2-4 circles of shredded mozzarella on a parchment lined baking sheet, top with freshly grated Parmesan & a little more mozzarella. Bake for 6-10 mins @ 375F. Take it out & before they harden fold each taco over a butter knife between two cups. Once they crisp up, remove from the butter knives, add your favorite fillings and enjoy! The author used Italian sausage with marinara and sautéed peppers & onions.
