First, prepare the sauce: In a blender, combine 2 tbsp guacamole, 1/4 cup cottage cheese, 1/4 cup mayo, and 1/2 jalapeño. Blend until smooth. To make the quesadilla: On half of a low carb tortilla, add cheese, the prepared sauce, cooked chicken, and more cheese. Fold the tortilla in half. Fry the folded quesadilla on medium heat until golden brown on both sides. Next, add cheddar cheese directly to your pan. Flip the quesadilla onto the melted cheddar and let it cook until the cheese sticks to the quesadilla and forms a crispy crust. Remove the quesadilla from the pan, slice it, and enjoy immediately.
