1. Preheat oven to 375F. 2. Slice eggplant into thin pieces. 3. Pat dry with paper towels and salt both sides heavily. 4. Cover with melted butter or oil of choice. 5. Add the eggplant slices to a baking sheet, put in oven and switch to broil until they turn golden brown (around 1 minute). 6. Take out, flip over, repeat until other side is golden brown. Turn broil off. 7. Add pizza toppings, & bake until the cheese melts (10-15 minutes). 8. Let cool & enjoy!
