Peel 2 medium zucchinis into thin sheets, salt heavily, and pat dry to remove moisture. Cook ground beef with salt, pepper, garlic powder, and oregano. Mix in marinara sauce and let it simmer for a few minutes. Roll the beef mixture into your zucchini sheets and place upright in a baking dish. Top with more marinara and mozzarella. Bake covered at 375°F (190°C) for 25 minutes. Remove the cover and put back in for 5-10 more minutes until cheese is bubbly and slightly browned. Take it out and enjoy!
