A fun and easy breakfast idea featuring onion rings filled with an egg, spinach, and tomato mixture, cooked on a skillet.

Cut an onion into rings. Whisk an egg and mix it with chopped spinach, tomato & seasonings. Add the rings to a buttered / greased non stick skillet on medium low heat, add the egg mix into each ring and flip after a minute or two. Once the other side cooks, take ‘em off and enjoy!
