In a non-stick pan over medium heat, add feta crumbles. Once the feta melts down, add pesto and an egg. Cover the pan and cook until the egg finishes cooking and the edges of the feta are golden brown. Remove from the pan, serve on a low carb tortilla, and enjoy. Pro tip: For an extra crispy tortilla, spray it with avocado oil and broil for a couple of minutes first. If you prefer a runnier egg yolk, do not cover the pan while cooking.
