Caramel Cluster Crusted Cheesecake with Ella's Flats

For the crust: 1. Combine everything except your flats in a pan over medium heat and stir until the sweetener dissolves. 2. Add your flats and stir around until completely coated. Keep stirring for 2 minutes and remove from heat. 3. Add to your cheesecake dish, and spread with a utensil to cover the bottom. (Line your dish with parchment paper). For the cheesecake: 1. Preheat oven to 350F. 2. Beat cream cheese until smooth. 3. Add the rest of the ingredients except the eggs and mix for around 2 minutes. 4. Add your eggs and mix well. 5. Make your crust & add it to a 9” springform pan. 6. Pour your cheesecake mix over the crust and bake for 45 minutes or until the edges start to turn light brown. 7. Let sit out for 1 hour and then add to refrigerator for atleast 3 hours. 8. While it’s in the refrigerator, make another batch of brittle but this time you can crumble it up. Freeze when finished. 9. Remove cheesecake from fridge, top with your brittle, & enjoy!
