1. Preheat your oven to 425F. 2. Slice your eggplant as thin as possible, salt heavily and let sit between two paper towels to remove moisture. (The longer the better) 3. Coat each slice in egg wash and grated Parmesan + the seasonings. 4. Bake for 15 mins, flipping halfway. 5. Add your favorite pizza toppings and broil until the cheese melts. Take them out & enjoy! Pro tip: If you fry them in oil instead of baking they will get extra crispy π Just make sure not to fry them once you add the pizza toppings, they have to be finished in the oven.
