A delicious and low-carb take on chicken parm, air-fried or baked, served with savory mozzarella waffles. This recipe is filling and perfect for a keto dinner.

For the Chicken: 1. Whisk the egg in one bowl. In a separate bowl, mix the seasonings (salt, garlic powder, oregano, black pepper) and coconut flour. 2. Dip the thawed chicken breast in the whisked egg, then coat thoroughly with the flour and seasoning mixture. 3. Air fry the coated chicken at 400°F for 10-15 minutes. Halfway through, you can melt the butter and drizzle it over the chicken (optional). 4. For the last 2 minutes of cooking, add shredded mozzarella on top of the chicken. Once melted, add Parmesan and marinara sauce. Ensure the chicken reaches an internal temperature of 165°F before eating. Alternative Baking Method for Chicken: If you don’t have an air fryer, you can bake the chicken breast at 350°F for 25-30 minutes. Always ensure the internal temperature reaches 165°F before eating. For the Waffle: 1. Mix the egg and 1/2 cup shredded mozzarella. Add seasonings of preference (the creator used the same as for the chicken). 2. Spray a waffle maker with non-stick spray. 3. Cook the mixture in the waffle maker until it indicates it's ready or until golden brown and crispy. Serve the Chicken Parm with the Mozzarella Waffle and enjoy!
