Slice an onion super thin. Arrange the sliced onion between two piles of shredded Mexican cheese on parchment paper. Bake at 400F for 10-12 minutes. Take them out, let cool until they crisp up and enjoy! For the sauce, just mix 3 tbsp mayo, 1 tbsp sugar free ketchup and 1-2 tsp of horseradish.
