Slice a whole onion super thin. Place each onion slice between two piles of shredded cheddar on a parchment-lined baking sheet. Bake for 6-10 minutes at 400F (200C) until crispy. While the onion chips are baking, mix 1 tsp horseradish, 3 tbsp mayo, and 1 tbsp sugar free ketchup together to create the blooming onion sauce. Serve the crispy onion chips with the sauce.
