A low-carb, high-flavor grinder salad roll-up made with a baked cheese and deli meat base, filled with a tangy, garlicky grinder salad.

1. Preheat oven to 400F. 2. Place 2 slices of cheese on parchment paper. Top with your desired deli meat. 3. Bake at 400F for 10 minutes. 4. Let the baked cheese and deli meat cool for 5-10 minutes until it's firm enough to roll up. 5. While cooling, prepare the grinder salad: In a bowl, mix 1.5 cups iceberg lettuce, 3 tablespoons mayonnaise, 2 tablespoons red wine vinegar, 1/4 cup banana peppers, optional banana pepper juice, oregano (to taste), 1 clove minced garlic, red pepper flakes (to taste), and salt & pepper (to taste). 6. Add 1/2 cup sliced red onion to the salad mixture. 7. Once the cheese/deli meat base has cooled, add the grinder salad mixture on top. 8. Roll it up tightly and enjoy!
