A delicious and low-carb cheesy baked cauliflower dish topped with bacon, perfect for those on a keto diet.

1. Preheat oven to 400F. 2. Coat cauliflower with olive oil, salt & pepper. Roast for 20 minutes and set aside. 3. Combine butter & cream cheese in a sauce pan over medium heat. 4. Add your seasonings, heavy cream, 1.5 cups shredded cheddar, & mozzarella to the pan and whisk until completely melted. 5. Add cauliflower to a greased baking dish and pour the sauce over your cauliflower. 6. Top with the rest of your cheddar cheese. 7. Bake at 400F for 20 minutes. 8. Remove from oven, top with bacon and fresh herbs for garnish. Enjoy!
