A delicious low-carb alternative to traditional fries, made from zucchini coated in a savory mixture of crushed pork rinds and parmesan, then air-fried or baked until crispy.

1. Cut a medium zucchini into fry-shaped pieces. Salt the zucchini and pat them dry to remove excess moisture; this prevents them from becoming moist after cooking. 2. In one bowl, whisk a large egg and set aside. In a separate bowl, combine the crushed pork rinds, grated parmesan, and your chosen seasonings. For a finer crumb, process the pork rinds in a blender or food processor until light and fluffy like panko. 3. Coat the zucchini pieces: First, dip them in the egg wash, then coat them thoroughly with the pork rind and parmesan mixture. To help the coating stick better, add a small amount of the breading to a dry bowl, coat a few fries at a time, and repeat. If the coating isn't sticking well, sprinkle more of the breading mix on top of each fry before cooking. 4. Air fry at 400F for 10-15 minutes until golden and crispy. Alternatively, you can bake them at 400F for approximately 20 minutes. 5. Take them out and enjoy immediately.
