A quick and easy recipe for a homemade Pesto Stuffed Hot Pocket using ground chicken, pesto, mozzarella, spinach, and grape tomatoes, air fried until golden.

Flatten 3-4 oz ground chicken into a circle on greased parchment paper. Add 1 tbsp pesto, 2 slices of mozzarella, a handful of chopped spinach & a few diced grape tomatoes. Fold it over and seal the edges. Coat with egg wash and parmesan. Air fry @ 400F for 10-12 mins. Take it out & enjoy!
