A quick and healthy low-carb tuna melt recipe featuring tuna salad served in air-fried zucchini boats, topped with cheddar cheese. Perfect for a keto-friendly lunch or dinner.

1. Prepare the tuna salad: In a bowl, combine the 3 cans of tuna, 1/3 cup mayo, 1/2 cup finely chopped red onion, 2 tbsp minced cilantro, 2 tbsp Dijon mustard, 1 tbsp lime juice, and seasonings of your choice. Add harissa if desired. 2. Prepare the zucchini: Chop 2 zucchini in half lengthwise and remove the guts. Pat the zucchini dry with paper towels and salt heavily. You can air fry the zucchini for a few minutes before adding the tuna salad if you prefer them more tender. 3. Fill the zucchini: Add your prepared tuna salad into the zucchini halves. 4. Add cheese: Top the tuna salad-filled zucchini with cheddar cheese. (The creator notes they add the cheddar AFTER putting them in the air fryer to enjoy any cheese that falls off.) 5. Air fry: Air fry the zucchini boats on parchment paper at 400F for 6-8 minutes.
