A simple recipe for crispy keto-friendly chicken tenders, adaptable for frying or air frying. It also includes an idea for turning the prepared tenders into a quick chicken parm.

1. Dip chicken tenders in egg and then coat them heavily with grated Parmesan (or coconut flour, almond flour or crushed pork rinds). Season heavily with your choice of seasoning. The original recipe used Italian seasoning, salt, pepper, garlic, oregano, & red pepper. 2. Fry at medium heat for 4 minutes on each side. Then switch heat to medium-high and fry for an additional 1-3 minutes on each side until cooked through. Make sure the internal temperature has reached 165F. 3. Remove from oil, let cool, and enjoy! Alternative: You can also air fry these for 10-15 minutes at 360F; just coat the tenders with oil first. To make Chicken Parm: Top the prepared chicken tenders with 1/2 cup marinara and some cheese (mozzarella & cheddar), then broil until the cheese is melted.
