Easy and quick low-carb chicken fingers made with a crispy pork rind coating, cooked in an air fryer. Perfect for a keto-friendly dinner or snack.

1. Add pork rinds to plastic bag and crush them up (I used a rolling pin), add seasonings into bag and mix. 2. Whisk egg in bowl. Then coat the chicken with egg, set aside. 3. Coat chicken with pork rinds evenly on both sides. I just use a spoon to put the coating on them and then spread it out with my fingers, flip, & repeat. 4. Air fry at 400F for 8-15 minutes flipping halfway through! Make sure internal temp is 165F and enjoy!
