What you need

slice jalapeno

tsp ground cumin

can enchilada sauce
slice ham slices

tbsp sour cream

tbsp hot sauce
egg
Instructions
1. Preheat oven to 400F. 2. Mix your scrambled eggs with sour cream, Mexican hot sauce, cumin, and 1/3 cup of cheese. 3. Roll the eggs into your slices of ham like little enchiladas. 4. Put them in a greased baking dish and top with your enchilada sauce, the rest of your cheese, and the jalapeños. 5. Bake covered for 20 minutes. 6. Remove the cover and broil for the last 1-3 minutes until cheese slightly browns. 7. Take out, let cool, & enjoy!View original recipe
