How to make the queso: Simply mix 1 cup of blended cottage cheese with 1/2 cup shredded cheddar & 2 tbsp of taco seasoning. Then microwave for 90 seconds, stirring every 30 seconds to combine. To make the casserole: 1. Preheat your oven to 375F. 2. Combine all of your ingredients (shredded chicken, cauliflower rice, broccoli florets, queso, buffalo sauce, Ranch Tortilla Style Chips) in a large baking dish, then top with the shredded Mexican cheese. 3.
