This is an amazing and easy Peanut Brittle recipe, perfect for those following a keto diet. Simply replace peanuts with other nuts like almonds, walnuts, pecans for variety.

What you need

cup erythritol

tbsp unsalted butter

tsp vanilla extract

cup unsalted peanuts
Instructions
1. Combine all ingredients except the peanuts in a non-stick skillet over medium heat until the erythritol dissolves. 2. Add peanuts and stir for 2-3 minutes. 3. Remove from stove and pour into a rimmed baking sheet / Pan lined with parchment paper. Spread peanuts evenly with a spoon. (Be careful it’s very hot) 4. Allow to cool for 1 hour.View original recipe
