Grinder Salad Roll Up

A low-carb, high-flavor grinder salad roll-up made with a baked cheese and deli meat base, filled with a tangy, garlicky grinder salad.

What you need

pepper

tsp salt

tsp red pepper flake

tbsp red wine vinegar

cup red onion

slice cheese

fl oz banana pepper

cup iceberg lettuce

tbsp mayonnaise

oz turkey deli meat

clove garlic clove
Instructions
1. Preheat oven to 400F. 2. Place 2 slices of cheese on parchment paper. Top with your desired deli meat. 3. Bake at 400F for 10 minutes. 4. Let the baked cheese and deli meat cool for 5-10 minutes until it's firm enough to roll up. 5. While cooling, prepare the grinder salad: In a bowl, mix 1.5 cups iceberg lettuce, 3 tablespoons mayonnaise, 2 tablespoons red wine vinegar, 1/4 cup banana peppers, optional banana pepper juice, oregano (to taste), 1 clove minced garlic, red pepper flakes (to taste), and salt & pepper (to taste). 6. Add 1/2 cup sliced red onion to the salad mixture. 7. Once the cheese/deli meat base has cooled, add the grinder salad mixture on top. 8. Roll it up tightly and enjoy!View original recipe
