Keto General Tso's Chicken and Cauliflower Rice

What you need
egg

cup coconut flour

tsp garlic powder

tsp cayenne pepper

tbsp ketchup

cup almond flour

tbsp soy sauce
oz chicken breast

tbsp erythritol

tbsp rice vinegar

tsp xanthan gum

seasoning mix
Instructions
1. Chop the chicken breast into bite-sized pieces. Dip each piece into the egg, then coat with coconut flour (or almond flour) and your preferred seasonings.
2. Cook the chicken using one of the following methods:
* **Air Fry:** Air fry at 400F (200C) for 10 minutes, flipping halfway through, or until the internal temperature reaches 165F (74C).
* **Pan Fry:** Alternatively, you can pan-fry the chicken until cooked through.
* **Bake:** Preheat your oven to 425F (220C). Bake the chicken for 45 minutes or until the internal temperature reaches 165F (74C).
3. While the chicken cooks, prepare the sauce: In a saucepan, combine erythritol (or your chosen sweetener), no sugar added ketchup, rice vinegar, soy sauce, garlic powder, chili powder, cayenne pepper (if using), and xanthan gum. Stir over medium-low heat until the mixture begins to boil.
4. Once the chicken is finished cooking, combine it with the prepared sauce, ensuring the chicken is well coated.
5. Serve hot. For a complete meal, consider serving with cauliflower rice (prepared by frying frozen cauliflower rice in butter).View original recipe
