Keto Low Carb Rutabaga Gratin

A delicious and cheesy gratin featuring thinly sliced rutabaga baked in a creamy sauce with Colby Jack and Parmesan cheese, seasoned perfectly for a low-carb and keto-friendly side dish.

What you need

tsp garlic powder
bunch fresh herbs

tbsp cream cheese

tsp onion powder

tbsp unsalted butter

oz bacon bits

cup rutabaga
cup colby jack

tsp pepper

tsp salt

tbsp olive oil

cup chicken broth

cup heavy cream

cup parmesan cheese
Instructions
1. Preheat oven to 375F. 2. Slice rutabaga as thin as possible (I used a mandolin) and mix in a bowl with the olive oil and your seasonings. 3. Add to a greased baking dish and set aside. 4. Combine the rest of your ingredients except the shredded colby jack in a saucepan over medium low and let simmer for 5 minutes. 5. Pour over the rutabaga slices, top with your Colby Jack & bake for 45 minutes. 6. Take out, top with bacon, sour cream & herbs. 7. Enjoy!View original recipe
