Keto mini corn dog recipe 😋 . . Ingredients: 5 hot dogs 1.5 cups shredded mozarella cheese 1/4 cup coconut flour 2 TBSP cream cheese 1 egg 1 tsp baking powder 1/4 tsp salt Seasonings to your preference Oil for frying (I used canola oil) . . Instructions: 1. Cook hot dogs because the dough will finish cooking before the hot dogs when frying them. cut them in half, set aside. 2. Add shredded cheese, coconut flour, and cream cheese to a bowl and microwave for 45 seconds. Mix and repeat until texture is somewhat consistent. 3. Add egg, seasonings, and baking powder then mix until texture is consistent. Separate dough into 10 balls (I put them on parchment paper) 4. Form the dough around the hot dogs until completely covered. 5. Add oil to pan and turn heat to medium high. Then put the corn dogs in one at a time and roll them around with a fork as the outside turns light brown (they literally cook almost instantly). Then set on a plate with paper towels. 6. Repeat until they're all finished and enjoy! (I used @alternasweets ketchup for a dipping sauce) . . Macros: (serving size is 2 mini corn dogs) Calories: 283 Fat: 23g Carbs: 3g Protein: 16g . Notes: The thinner you can get the dough, the better they turn out. It can be tricky getting it to go around the hot dog so I found that microwaving each ball of dough for 5-10 seconds before shaping it helps a lot.
