can canned diced tomatoes

Instructions
1. Preheat your oven to 350F. 2. Peel your zucchini or slice using a mandolin. 3. Lay it out on paper towels & add salt. Pat dry. 4. Add each slice to a muffin tin & crack your eggs into each cup. 5. Top with cheese, tomatoes, seasonings and anything else you want. 6. Bake for 20-30 mins, take them out & enjoy!View original recipe
