Instructions
1. Cut a zucchini in half lengthwise and hollow it out with a spoon. Salt the hollowed zucchini and pat it dry with paper towels to remove excess moisture. 2. Pro tip: For a more tender zucchini, air fry the hollowed zucchini boats at 360F for 5-7 minutes before adding the filling. 3. In a bowl, mix shredded chicken, 1/4 cup blended cottage cheese, 1.5 oz cream cheese, salt, pepper, garlic powder, paprika, and chili powder. 4. Spoon the chicken mixture into the zucchini boats. 5. Air fry the filled zucchini boats at 360F for 7-9 minutes. 6. Remove the boats from the air fryer, add sliced jalapeños and shredded cheese on top. 7.
