1. Preheat your air fryer to 400°F (200°C). 2. Cook the steak for a medium-rare finish: place it in the air fryer and cook for 4-6 minutes on each side, adjusting time based on the steak's thickness and desired doneness. 3. While the steak cooks, prepare the Shaved Brussels Sprout Salad components: Shave 2 dozen Brussels sprouts (or use a pre-shaved bag). Cook 6 slices of bacon until crispy, then crumble. 4. Prepare the Vinaigrette: In a small bowl, whisk together 4 tablespoons extra virgin olive oil, 2 tablespoons lemon juice, 1 teaspoon dried oregano, 1 teaspoon garlic powder, 1 teaspoon pepper, ½ teaspoon salt, and the optional 1 small chopped shallot. 5. In a large bowl, combine the shaved Brussels sprouts, 1/4 cup chopped roasted walnuts, crumbled crispy bacon, 1/3 cup grated Pecorino Romano cheese, and 1/3 cup chopped roasted walnuts. 6.
