Mix the peanut butter, sweetener, and egg. 2. Shape into thin cookies on a parchment-lined baking sheet. Press the center down with a spoon. 3. Add the mashed strawberries + chocolate chips. 4. Flatten another cookie-sized piece of dough and place it on top. 5. Seal the edges and bake at 350° for 15–20 min. 6. Let cool completely before messing with them and enjoy! Pro tip: I added a teaspoon of xanthan gum to the mixture to make sure they wouldn’t crumble apart. I’m not sure how essential this was to the texture so if you have it on hand, I would add it just to be safe.
